Pinterest Dinners | Meal Planning

Pinterest Dinners was something fun and funky to make meal planning for the last 2 weeks a little something different! I have said it many times before, I may just possibly be addicted to Pinterest. To make my addiction a little more upfront and seem ok I decided why not meal plan our dinners for 2 weeks off of that! Dan was on board since it was all new recipes, and there would be plenty of left overs for his lunches, and to throw in to a random dinner the next night if we didn’t feel like cooking from scratch!

So we had the following!

Huevos Rancheros — these are so easy to throw together last minute as we keep black beans, tortillas, eggs and cheese on hand all the time! The rice in ours was leftover from another meal!

Breakfast Burritos — Delicious and easy to throw together with what you have in your fridge!

Chicken Taquitos — These are delicious!  We added salsa (because we had it in the fridge), and we used Kale instead of spinach because we had that as well! Highly recommend and you can make as many or as few as you need! Leftover lunches!

Buffalo Chicken Grilled Cheese — amazing and delicious and great left over goodness for a cold sandwich!  We did not use fancy bread and after eating we will next time! Easy peasy cooking! Enjoy it!

4 Ingredient Sugar Cookies — tip use granulated sugar instead of confectioners, and do 1/4 less flour than the recipe calls for!  I can’t take the credit for these, this is all of Dan’s cooking/baking :) oh and we added sprinkles because we had them in the pantry!  Also this recipe is free to us because we keep all these items in the pantry at all time, we don’t buy these ingredients just to make the cookies :)

Philly Chicken Cheesesteaks — we used large sandwich rolls for these, and we didn’t cook as much as the recipe said because we are only two people it still left two lunches for dan!

Chicken Taco Chili — we made corn muffins instead of rice, and also had tortilla chips to go with!  It was a hit by Dan and his work husband, who came for dinner that night! :)
